Up at 10.30am (extra Sunday lie in, which was nice until I
realised how much time I had lost from my day).
1.30pm – Roast lamb on a bed of curly kale, butternut squash
baked with a little olive oil and garlic, carrots and sweet corn.
This afternoon I made butter…yes, made butter…oh, the
culinary alchemy ;-)
Then I attempted to make scones using chestnut flour
(instead of wheat flour) and xylitol (made from birch trees) instead of sugar.

Whilst baking I ate the equivalent of one scone (testing a
bit of the sweet ones and a bit of the cheesy ones), and a biscuit (made with
chestnut flour, honey, butter, oats and mixed seeds) and a few nuts.
7.00pm – Bowl of chopped beetroot, avocado and chicken
breast (left over from last night) with some lemon juice and a little garlic
and herb seasoning.
Half a mango then a chestnut flour cheese scone with some homemade
butter on.
The home made butter turned out great and I used most of it in
the baking I did this afternoon. The scones were all right, of course they don’t
taste like regular scones but if I get the urge to have something like that
they will do the job with out me eating the things I am trying to avoid (wheat
and sugar). The biscuits were pretty good, although my other half commented
that they ‘don’t taste like proper biscuits’, which is understandable as they
only had a little honey rather than refined sugar and of course the chestnut
flour has a somewhat different taste and texture to wheat flour. Still I wasn’t
expecting him to be won over, but hopefully if he sees my way of eating having
a positive effect on my weight and health he is more likely to be won over.
So the weekend is coming to an end, and tomorrow I will be
back to getting up early…which is good as I have loads to be getting on with
this week.
